FootFall Menus - 2017

Here is our tentative menu for the weekend. Please note that it is subject to change, but we think any changes will be minor. We want you to have advance notice, to allow for allergy issues, etc. There is a campers' refrigerator in the Dining Hall, which is accessible all day. The salad bar, which will be available at both lunch and dinner, is well stocked with cheeses, tuna, orzo, black beans, carrots, red and green peppers, tomatoes, tofu, and more, plus about half a dozen dressings.

Coffee and hot water for tea or cocoa will be available all day, as will ice water. Additional beverages will include juice for breakfast, and lemonade and iced tea at lunch and dinner.

Friday dinner

Baked Salmon with lemon
Green beans
Jasmine rice with coconut milk, lime and basil
Salad bar
Dessert: Apple crumble with vanilla ice cream
Vegetarian/Vegan entree:
Couscous with black beans and sweet red peppers
  (cheese on the side for vegetarians)

For late arrivals:
Sliced turkey breast, sliced cheese, PB&J,
bread, yogurt, cookies, carrots.

 

Saturday dinner

Roast Chicken
Sauteed spinach with garlic
Roast potatoes with herbs
Salad bar
Dessert: Chocolate chip pancakes with fruit and whipped topping
Vegetarian/Vegan entree:
Quinoa with mushrooms and onions

Friday After Dance Snack

Lemonade
Cheese, nuts, fruit, chocolate, pretzels or chips.
Plus contributions from campers.

 

Saturday After Dance Snack

Lemonade
Cheese, nuts, fruit, chocolate, pretzels or chips.
Plus contributions from campers.

Saturday breakfast

Hard cooked eggs
Whole wheat or blueberry pancakes
Bacon or vegetarian sausage
Fresh fruit

Sunday breakfast

Scrambled eggs

Hot and cold cereals

Saturday lunch

Quiche: Spinach, Cheese, and Bacon/onion
Sauteed zucchini and yellow squash
Cooked carrots with dill
Salad bar
Dessert: Sherbet and cookies
Vegan entree:
Black beans and rice

 

Sunday lunch

Burgers -- beef, turkey, or soy (vegan/vegetarian)
condiments: tomato, sliced onion, lettuce, pickles
Tater tots
Salad bar
Dessert: Muffins (chocolate, blueberry, apple cinnamon, lemon poppyseed)
